Another Fall Recipe - Smoked Gouda Mac and Cheese

My Family loves Macaroni and Cheese. I am talking the Kraft powdered orange cheese facsimile. They will eat that stuff by the case from Sam's club.

I personally don't like that kind of Mac and Cheese and I have been working on finding a working solution for all of us.

I think I found something we all liked last night so I am going to share. 

The measurements aren't exact because that's just the way I cook and I hope the kids don't see this because they will never eat it again.

1 stick of butter

1/2 onion chopped fine

4 garlic cloves smashed

2-3 tablespoons of flour or other thickening agent

1 cup Cheddar Cheese Shredded

1 cup Smoked Gouda Cheese Shedded (kind of I chopped it into small blocks with a knife)

~16 oz heavy cream

1 box of fancy elbow macaroni

salt and pepper

nutmeg

bread crumbs

seafood (I used white crab meat)

Boil the pasta like you normally do. While that is boiling, get out a heavy skillet and saute the onion and garlic in the butter.

Turn your oven on to 375 degrees and get it warming up.

Once the onions and Garlic are soft add the flour and mix it in that butter. You can take out the onions and garlic but I just kind of scoot them over in the pan. When the flour is all mixed in start adding the heavy cream and continue stirring. I did not say this was healthy in any way, shape or form. Don't let it clump up. Reduce heat and let that cook down.

By now your pasta should be ready. Drain it and put it into a casserole dish. Go back to the stove and salt and pepper your garlic onions and cream to taste. Once you have that Add in the cheese and Stir. When that's all melted pour it over the pasta and add your seafood, sprinkle on you nutmeg (old Bay or Cajun seasoning would be good too) and gently fold that into the pasta. 

Once that is folded in good, sprinkle your bread crumbs on top and put it in the oven till it is brown on top and the contents are bubbly.

That's it. The adults liked it and the kids liked it too. After much experimentation, I found a winner around our house. If you try it let me know what you think. If you get stuck at some point just give me a call and I'll let you know what I would do but experiment and add your favorite things in.
